Allergen Policy

1. Purpose 

This policy ensures that all cakes and baked goods produced, sold, or delivered by THAT Cake Lady comply with UK food allergen regulations, protecting customers with food allergies or intolerances. 

 

2. Scope 

This applies to all staff, contractors, and delivery partners involved in the preparation, packaging, sale, and delivery of our products. 

 

3. Legal Compliance 

We comply with: 

  • UK Food Information Regulations 2014 
  • EU Regulation No. 1169/2011 on the provision of food information to consumers (retained in UK law) 
  • Natasha’s Law (for prepacked for direct sale items) 
  • THAT Cake Lady holds full business insurance and is registered with the Local County Council in Devon and complies with the EHO Policies and guidance. 

 

 

4. Allergen Management 

We identify and manage the 14 major allergens: 

  1. Cereals containing gluten (wheat, rye, barley, oats) 
  2. Crustaceans 
  3. Eggs 
  4. Fish 
  5. Peanuts 
  6. Soybeans 
  7. Milk 
  8. Nuts (almonds, hazelnuts, walnuts, cashews, pecans, Brazil nuts, pistachios, macadamias) 
  9. Celery 
  10. Mustard 
  11. Sesame seeds 
  12. Sulphur dioxide/sulphites 
  13. Lupin 
  14. Molluscs 

 

5. Ingredient Control 

  • All suppliers must provide full ingredient and allergen information. 
  • Allergen-containing ingredients are stored separately and clearly labelled. 
  • Recipes are documented with allergen details. 
  • A Full Allergen Matrix is completed for every product that is made and these are regularly updated. 
  • A full list of suppliers and Stockists are retained in the event of a product recall or withdrawal. 

 

6. Cross-Contamination Prevention 

Dedicated utensils and equipment are used where possible to reduce the risk of cross-contamination. 

Thorough cleaning between production runs. 

Staff are all trained in allergen awareness and safe handling. 

 

7. Customer Information 

Before ordering: Allergen information is available on our website, menus, and via phone/email. If purchasing from our Cake Shed, the allergens are clearly written and displayed with each product and on the packaging. 

At point of sale: Written allergen information is provided with each order. 

For delivery: Allergen labels are attached to packaging, and a printed allergen sheet is included. 

 

8. Staff Training 

All staff receive allergen awareness training on induction and refresher training annually. Certificates obtained evidencing the course completion can be displayed or shown on request. 

 

9. Incident Management 

Any allergen-related complaint or incident is recorded, investigated, and corrective action taken immediately. 

 

10. Review 

This policy is reviewed annually or sooner if regulations change.
